
Sambusas
Lentils are versatile and can be used to create exciting dishes. This Ethiopian recipe reminds me of a flat samosa.
This recipe was based off of a Demand Africa post.
Ingredients:
- cooked lentils
(I know not everyone has these at the ready so just follow the instructions
on the package which may require soaking overnight) - 2 jalapenos
- 1 large sweet onion
- salt/pepper
- garlic (3 cloves)
- fresh cilantro
- cinnamon (1/2 tsp)
- ground cardamom (1tsp)
- olive oil
- pre made spring roll sheets
Steps:
First – Heat oven to 400 degrees. Dice up the onions, garlic, and jalapenos
(take out the seeds for texture reasons),
Then cook in a pan with the olive oil
Second – Add spices and salt / pepper to taste (Do not use the cilantro yet!)
Third – Add your cooked lentils to the pan and cook everything together for at least 5 more minutes
Fourth – Take off heat, let cool, and stir in cut up cilantro
Fifth – Start filling your spring roll sheets with the lentil mix. Fold up the package like an envelope.
Sixth – Place these on a tin foil lined baking tray but generously brush the entire envelope with a coat of olive oil (on all sides)
Seven – Put a tin full of water on the bottom tray of the oven and place the baking tray on the higher rack. Cook for about 10 minutes or until it starts to get brown and crispy.
