Scallion pancakes or Kimchi Pancakes
Ingredients:
Flour (2 cups)
for Scallion pancakes chop up atleast 5 scallions
OR if you want kimchi pancakes cut up 2/3 cups worth of Kimchi
Salt (1/2 tsp)
Garlic powder, onion powder, and black pepper to taste
Sesame oil (1 tbsp)
Water (enough to make the batter runny / pancake like)
***Canola oil for the pan***
(I found out from reading many scallion pancake recipes that you’re NOT supposed to use an egg in the batter like regular pancakes …. I did and it came out delicious so this is a judgement call for you
Steps:
First: Mix together the flour, sesame oil, spices, main ingredient (scallion or kimchi), *egg optional*, and then enough water to make the batter to a pancake consistency.
Second: Heat up a pan with canola oil
Third: Drop batter in fist sized circles into the oil and cook on both sides until crispy
Fourth: Place finished pancakes on paper towels and dab off extra oil
Fifth: Sprinkle on shaved salt and either serve with a 1 part vinegar 3 parts soy sauce mixture or spicy may0
(I mixed mayo with Thai chili garlic sauce)
